NEW Zi Char Shiok Series by Sushi Express (1 Jul to 31 Aug 25)

Limited-edition trio of zi char-inspired sushi created in collaboration with Singapore’s very own competitive eating sensation, Zermatt Neo.

 

Drawing on the comforting flavours that define Singapore’s zi char culture, the series reimagines hawker staples through the lens of Japanese gastronomy.

 

Carefully crafted by a skilled in-house chef team and Zermatt, the series comprises Sushi Express’ interpretation of household favourite condiments, resulting in the Salted Egg Abalone, Sweet & Sour Fish, and Cereal Prawn sushi.

Salted Egg Abalone

Abalone on shell grilled with flavourful salted egg sauce packs a punch, and is topped with crispy salted egg bits and slices of red chilli.

 

Sweet & Sour Fish 

Presented as a hanamaki – a sushi roll wrapped by a generous slice of raw fish, in this case, salmon – is accompanied by cubes of green and red pepper, pineapple, and onion, while lightly blanched swordfish cubes are mixed with a subtle sweet and sour sauce merely to add a tang to the freshness of the fish.

 

Cereal Prawn 

Argentine shrimp brushed with garlic butter, grilled before a light coating of barely noticeable condensed milk keeps the cereal intact. With the sweet balancing the savoury, crispy salted egg bits, sliced red chili and parsley top this with a delicious touch and fragrance.
